
Review - Paudin Ultra Dark Premium 12" Fillet Knife
A sharp, sleek and surprisngly affordable brisket knife
First Impressions
I got this knife because I was in need of a brisket slicer and had used Paudin knives before. When it arrived, it came in a black presentation box. It has a decent weight, and the slight curve in the handle gave a very ergonomic feel.
Operation
The blade is sharp. Even more so than I expected. Initially I feared that it might have been over sharpened to make a good first impression, but would quickly dull and need constant maintenance. Thankfully this has not proven to be the case. I've had this knife for two years now and it is still as sharp as when I first got it despite frequent use.
Conclusion
Is this the best knife on the market? Possibly not. There's absolutely nothing wrong with it, but I'm sure some more expensive knifes might have something to offer. That said, this one has been faultless and is a fraction of the price of some of the other offerings out there, and I can't see why I'd consider spending more money for another knife when this one works so well.
